Easy Recipes: Slow Cooker Pork Loin

Think you don't have time to make a nutritious, wholesome meal? Think again.

 

Sometimes, preparing and cooking nutritious, wholesome meals can be time-consuming and thus we never find the opportunity to make the wonderful foods that perhaps our ancestors ate more often.

The following recipe is no exception: for an absolutely delectable final product, this meal can take up to seven hours, but here’s the catch: You can use a crock-pot or dutch oven to make it, so you can throw a bunch of ingredients, with minimal preparation, into the pot and “set it, and forget it.”

Slow Cooker Pork Loin

3 lbs pork loin
1 can tomato sauce (12 oz)
2+ cups sliced zucchini
4 cups chopped cauliflower florets
1-2 tbsp basil

Add all of the ingredients to a large crock-pot. Cook on low for 5-10 hours, then enjoy. How simple is that? Feel free to add, or mix and match, some of your favorite vegetables and/or spices. Set it up in the morning and have an incredible meal waiting for you when the time is right for supper.

This recipe is big for a reason: store the rest in the fridge, then reheat, for some leftovers the following day or two.
